Vegan Summer supper -who needs barbecue?

I just had to tell you about the supper we shared tonight...
Clockwise from top left: couscous and sundried tomato salad, green salad with alfalfa and beansprouts, hummus, mixed olives, spelt bread. There was also organic beetroot salad made from cubed cooked beetroot in fresh lemon juice, and tofu burgers (slabs of marinated tofu baked in a crispy spiced coating...recipe to follow in another post). To follow, we had date sachertorte (see previous post) with Swedish Glace vegan icecream. Yum!

Date Sachertorte- vegan

The pics show milk chocolate as the topping as it was all I had; substitute this for plain or soya chocolate
So here I am, back with a brand new laptop and another vegan cake recipe for you...
The twist in this one is the date syrup; while it does contain some sucrose as well as fructose, date syrup is a much more natural product than sugar, and has a great flavour.
300g self-rasing flour
200g ground almonds
4 rounded tabs cocoa
4 tsps baking powder
150ml rice bran oil
2 tsps natural almond essence
400ml soya milk
200ml date syrup
200g chocolate (plain or vegan "milk")
Ground almonds to decorate
  • Measure out and mix all the dry ingredients together in a large bowl.
  • Mix the wet ingredients with a balloon whisk to ensure the date syrup does not separate from the rest and end up as sludge in the bottom of the container.
  • Put into a cake tin the same size as for Agave Almond Slice (ie: medium square tin or about 9" round) and bake in a preaheted oven at 180C for 20-30 minutes, until a skewer inserted comes out clean.
  • While still hot, top with small pieces of chocolate; they will melt rapidly and you can spread it evenly. Then decorate with a pattern of sprinkled ground almonds. Leave to cool and set, then carefully remove from tin or cut into portions in the tin.
Simple to make, and very delicious... turns out very almond-y, but quite light and fluffy too. Great with a mug of redbush tea or hot chocolate! I will try a version of this made with bajri (millet flour) and post the results; wheat/ gluten-free is the next step, as I have a few friends who are sensitve to wheat/ gluten.

Hare Krishna Festival in the UK!

Birmingham Festival of Harikatha, 24-27 June 2011
Thought I would just give this event a quick plug; it promises to be a wonderful few days! To those of you new to Krishna Consciousness, "Harikatha" means talks about Krishna, and we have a great speaker, Sripada Bhaktivedanta Vana Maharaja from West Bengal in India. He is a sannyasi (see my page "What is Bhakti Yoga?" to find out more) and has been travelling the world extensively for around the last 12 years teaching Bhakti Yoga and inspiring hundreds of people. Visit and click on Bhakti Yoga Teachers for a full bio.
We also have other distinguished sannyasis from our sanga: BV Ashrama Maharaja, BV Giri Mahahraja and BV Bhagavat Maharaja. There will be music, dance and stalls too.
The highlight of the musical program will undoubtedly be The Kirtaniyas, an amazing young four-piece band from LA who have already gathered a big following in the states (see and are currently promoting their new album in Europe.
There will also be workshops; so far we have personal development/ communication, art/ craft- and yours truly will even be doing a cookery class or two at some point. (I may even run a cake stall with my daughter if time and work schedules allow...)
-And not forgetting the free vegetarian (of course) prasadam available at breakfast time, 1:00pm and in the evening too. My husband is in charge of the kitchen, and with a lot of our homegrown organic produce  (hopefully) available, you are sure of both healthy and delicious fare...
    Sripada BV Vana Maharaja
The venue is Namdhari Gurdwara, 1199 Coventry Road, Birmingham B25 8DF. Free parking at the back;  camper vans welcome! Further details are on in the Tours and Festivals section.

Please come and find out more about our sweet Krishna-Conscious way of life, join in and be inspired whatever your chosen path!
